Garlic Beets
8 ounces whole beets, stems and leaves removed
3 tablespoons sour cream
1 teaspoon turmeric
1 garlic clove, grated on a microplaneBoil the beets until fork tender, remove and set aside to cool. When cool, rub the beets to remove the peel. Grate on the fine side of the grater and then add the rest of the ingredients. Mix to combine and store in the refrigerator for up to 2 days.
