Vanilla Spritz Cookies
12 tablespoons unsalted butter, room temperature 1/2 cup sugar
1 vanilla bean
1 egg yolk
1 ¾ cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon ground cinnamonScrape the seeds out the vanilla bean. Beat butter, sugar and vanilla until light and fluffy. Add the yolk and beat well. Add the flour, salt and cinnamon and mix until everything is nicely combined. Use a cookie press to pipe out the cookies. Bake at 350 F until just golden around edges. While the cookies are hot, sprinkle a little granulated sugar over them and let them cool.
The dough can be frozen for a month or refrigerated for up to 3 days. Bring to room temperature before using.
